Capirotada (Bread Pudding)

Ingredients:
  • 12 slices toasted bread
  • 2 cup water
  • 1 cup sugar
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cloves
  • 1/4 tsp. salt
  • 1 1/2 cups grated Mexican style fresh cheese
  • 1 1/2 cups raisins
  • 4 Tbsp. Gold-n-Soft® Vegetable Oil Spread plus 1 Tbsp. for greasing baking pan
  •  1 cup heavy cream whipped (optional)
Directions:

  • Spread 4 tablespoons of Gold-n-Soft® evenly over the slices of bread, break into 2" pieces.
  • Mix water, sugar, spices and salt in a sauce pot. Bring to a boil and simmer for 10 minutes.
  • Grease an oblong baking pan with Vegetable Oil Spread. Layer bread, cheese, raisins and butter. Pour syrup over bread mixtureand bake at 350 F for 20 minutes or until syrup is absorbed.
  • May be served warm or cold. Top with whipped cream if desired.
