Cheddar & Herb Mashed Potatoes

  • 6 tbsp. Gold ’n Soft® Vegetable Oil Spread
  • 4 large baking potatoes (approx. 2 lbs.) peeled and cut into 1” pieces
  • 3/4 cup milk
  • 1/2 tsp. dried rosemary or 1 tsp. dried crushed basil leaves
  • 1/4 tsp. pepper
  • 1/8 tsp. salt
  • 1-1/2 cups diced cheddar cheese (approx. 6 oz.)
  • 1 egg beaten
  • 1/4 dry bread crumbs

Place potatoes in large saucepan. Cover with water and bring to a boil. Reduce heat to medium-low. Cover and cook for ten minutes or until fork-tender. Drain and mash the potatoes.

Add milk, rosemary, pepper, salt, and 4 Tablespoons of Gold ’n Soft® Vegetable Oil Spread to hot potatoes. Stir in cheddar cheese and egg. Spoon into greased 2-qt. shallow baking dish. Melt remaining Gold ’n Soft® and stir in bread crumbs. Sprinkle over potato mixture. *Bake at 375º F for 30 minutes. Let stand 10 minutes before serving. Enjoy as is or with your favorite gravy.
