Calabacitas (Baked Summer Squash Casserole)

Ingredients:
  • 4 zucchini or yellow squash, sliced
  • 1 large onion, chopped
  • 3 Tbsp. Gold-n-Soft® Vegetable Oil Spread plus 1 Tbsp. for greasing casserole dish
  • 2 cloves garlic minced
  • 1 can (4 oz.) chopped green chili
  • 1 can (16 oz.) whole kernel corn
  • 1 cup grated cheddar cheese
Directions:

Sauté squash and onion in Gold-n-Soft® until barely tender, about 5 minutes.

Add garlic, chilies, corn and cheese; mix well. Put in greased 1-quart Casserole and bake at 400 F for 20 minutes.
