Apple Enchiladas with Warm Cajeta Caramel Sauce

  • 6 ea. Granny Smith Apples/4 Cups
  • 1/2 Cup Gold ’n Soft® Light 39% Vegetable Oil Spread
  • 1 Teaspoon Cinnamon
  • 1/2 Cup White Sugar
  • 1/2 Cup Brown Sugar
  • 1/2 Cup Water
  • 1 Teaspoon Lime Juice
  • 6 (8 Inch) Flour Tortillas

Preheat oven to 350 F.

Peel apples, and dice medium. Heat a pan with Gold ’n Soft® Vegetable Oil Spread.

Cook apples on high heat to lightly brown, add cinnamon, sugars, & water. Bring to a boil and reduce 3 minutes. Sprinkle with lime juice.

Allow mix to cool at room temperature.

Lightly brush tortillas with sauce, place apples into tortilla and roll up.

Place the tortillas into a non stick baking pan and cover with additional sauce. Bake 20 minutes until crisp and light brown.

Warm cajeta in microwave and drizzle over enchiladas.
