4 zucchini or yellow squash, sliced
1 large onion, chopped
3 tbsp Gold ’n Soft® Vegetable Oil Spread plus 1 tbsp. for greasing casserole dish
2 cloves garlic, minced
1 can (4 oz) chopped green chiles
1 can (16 oz) whole kernel corn (optional)
1 cup grated cheddar cheese
1/2 cup Parmesan cheese

Sauté squash and onion in Gold ’n Soft® until barely tender, about 5 minutes.

Add garlic, chiles, corn and cheeses; mix well. Put in greased 1-quart casserole and bake at 400º F for 20 minutes.
