Ingredients
12 oz lean ground turkey
2 chipotle peppers in adobo sauce or to taste
1/2 cup of water
2 tbsp Gold ’n Soft® Vegetable Oil Spread
Salt and pepper to taste
3 Guerrero 6-inch tortillas
4 tbsp Gold ’n Soft® Vegetable Oil Spread
3 oz refried beans
1 cup shredded lettuce
1/4 cup green chiles, diced
1/2 of a red onion, small dice
1/4 cup salsa, hot or mild
1/4 cup shredded taco cheese
Black olives, chopped tomatoes, avocado, cilantro for garnish
Directions
Preheat oven to 350º F. Brush each tortilla on both sides with 2 tbsp Gold ’n Soft® Vegetable Oil Spread, bake tortillas until golden and crisp, cool.
Blend chipotle peppers in adobo sauce and water in a blender until smooth.
Next, heat a pan on medium, add in 4 tbsp Chipotle Gold ’n Soft® Vegetable Oil Spread and ground turkey. Stir the turkey and break into pieces as you cook. Add chipotle sauce and cook through. Season to taste.
To build: place a crisp tortilla on plate, top with beans, 4 oz turkey, lettuce, chiles, onion, salsa and cheese. Repeat two times to get three layers. Add any or all of the optional garnishes.
