2 eggs
1 tbsp milk
Salt and pepper to taste
2 tbsp Gold ’n Soft® Vegetable Oil Spread
1/2 an avocado, peeled, pitted, cut into slices
Pico de gallo, cilantro and sour cream for topping

Beat the eggs with milk, salt and pepper. Heat a skillet over medium heat and then melt the Gold ’n Soft® Vegetable Oil Spread. Swirl it around the skillet and add the eggs. Cook until set, using a nonstick spatula to move around the cooked edges of the omelet to the center and tilting the pan as needed so it cooks evenly. Once set, place avocado slices on one side of the omelet and fold over. Top with pico de gallo, cilantro and sour cream and serve immediately.
