Pork Tenderloin with Cilantro and Lime

Ingredients
1 to 2 pork tenderloins (1-1/2 to 2 pounds)
4 cloves of garlic, minced
1/2 tsp oregano
1/2 tsp ground cumin
Salt and pepper
1-2 chipotle chiles in adobo sauce, chopped or pureed
The juice of 2 to 3 limes
3/4 cup Gold ’n Soft® Vegetable Oil Spread
3/4 cup chopped cilantro
Finely shredded lime peel
Directions
Season the tenderloins with the garlic, oregano, cumin, salt, pepper and the chipotle chile. Let stand for approximately 10 minutes for a more intense flavor. In a large sauté or frying pan, melt 3 tablespoons of the Gold ’n Soft® Vegetable Oil Spread and brown the tenderloins all around.
Cook at medium heat, turning often, for 15-20 minutes or until done. Lower the heat if necessary.
Set the tenderloins on a plate and cover. Meanwhile, keep the pan warm and pour the lime juice mixing well.
Add Gold ’n Soft® Vegetable Oil Spread, cilantro and lime peel. Let melt while mixing well. As soon as it boils, pour on top of the tenderloin. Serve with rice and salad. Or with tortillas and guacamole.
Tips: You can sauté the pork in a pan and then place in the oven at 350º F for 25 minutes while you prepare the lime and cilantro sauce. Interior temperature should be 155 degrees.
You can also use orange instead of lemon for a sweeter sauce. This recipe is great with chicken or fish.
