Turkey Cutlets with Angel Hair

8 oz Gold ’n Soft® Vegetable Oil Spread, plus 2 oz for frying
8 cloves garlic, sliced
1 onion, chopped
1 carrot, peeled, diced
1 can tomatoes, diced
1 pound turkey cutlets
3/4 cup flour
Salt and pepper to taste
1 egg, beaten
1 1/2 cups Italian breadcrumbs
1 lb angel hair pasta, cooked
1/2 cup Parmesan cheese, grated
2 tbsp parsley, chopped

In a large skillet, over medium high heat, add 8 oz Gold ’n Soft® Vegetable Oil Spread. Add garlic and cook until light brown. Add in the onion, carrot, and tomatoes. Cook 3 minutes.

Combine flour, salt and pepper in one bowl. In another bowl, mix the egg and 2 tbsp water. In a third bowl, add breadcrumbs.

Season the turkey cutlets with salt and pepper, then dredge in the flour. Shake off, then dip in the egg mixture. Shake off extra, then dredge in the breadcrumbs.

In another skillet, heat the rest of the Gold ’n Soft® Vegetable Oil Spread over medium high heat. In batches, cook the chicken.

Warm angel hair and top with chicken and sauce. Top with cheese and parsley.
